Chili peppers are believed to have originated somewhere in Central or South America [6] [7] [8] and were first cultivated in Mexico. [9] After the Columbian Exchange, many cultivars of chili pepper spread around the world, used for both food and traditional medicine. This led to a wide variety of cultivars, including the annuum species, with its glabriusculum variety and New Mexico cultivar group, and the species of baccatum, chinense, frutescens, and pubescens. Another way to preserve chillies by freezing them is to put the whole chillies in a plastic container. Before freezing the chillies in whole, you need to make sure that the chillies are dry. If you grow your own plants and using no pesticides, there is no need to clean the chillies before storing. The hottest varieties need the longest growing period.
