Description

Guava ( / ˈ ɡ w ɑː v ə/) [1] is a common tropical fruit cultivated in many tropical and subtropical regions. [2] The common guava Psidium guajava (lemon guava, apple guava) is a small tree in the myrtle family ( Myrtaceae), native to Mexico, Central America, the Caribbean and northern South America. [2] The name guava is also given to some other species in the genus Psidium such as strawberry guava ( Psidium cattleyanum) and to the pineapple guava, Feijoa sellowiana. In 2019, 55 million tonnes of guavas were produced worldwide, led by India with 45% of the total. Botanically, guavas are berries. The name goiabada comes from the Portuguese word for guava, goiaba. This fruit conserve is a popular dessert throughout the Portuguese speaking world. It originated in Brazil during colonial times. Slaves cooked guavas and the abundant cane sugar in the area slowly over fires in large cauldrons. Refrigeration: For short-term storage, place the sealed container of guava paste in the refrigerator. The cool temperature will help preserve its freshness and extend its shelf life. It is best to consume refrigerated guava paste within a few weeks. Essentially, a conserve is a way of preserving fruit with sugar. Any jam or marmalade would be an example of a conserve.

Díaz-de-Cerio, E., et al. (2017). Health effects of Psidium guajava L. leaves: An overview of the last decade. Doubova, S. V., et al. (2007). Effect of a Psidii guajavae folium extract in the treatment of primary dysmenorrhea: A randomized clinical trial. Firstly wash the fruit in cold water or under the tap. Cut guavas in half and scoop out the seeds. Place the halved fruit into a large bowl and the seeds into a smaller bowl with 1 x cup of water. Depending on the size of the guava, I found it easier to scoop out the seeds with the end of a teaspoon. This is the time-consuming bit and requires a strong cup of coffee and about 30 minutes. Goiabada is a regional variant of the Portuguese marmalada, which uses quince instead of guavas. The original dish is also called quince cheese. It also is the origin for our word marmalade, even though now we use oranges to make it.

Freezing: If you want to enjoy guava paste for an extended period, freezing is a great option. Divide the guava paste into smaller portions and place them in freezer-safe containers or freezer bags. Label them with the date and store them in the freezer. Frozen guava paste can retain its quality for up to six months. As much as I love the fresh fruit however, what I’ve come to discover is that a lot of cooking is actually done with guava paste. It’s an incredibly versatile ingredient that is basically made from guava puree cooked down with sugar to preserve it.

By following these simple serving and storing tips, you can make the most of your homemade guava paste, ensuring that each bite is as delightful as the first. Now that you know how to serve and store guava paste, it’s time to unleash your creativity and enjoy the sweet rewards of your labor. Cake filling: Rocambole or Brazilian roll is a Swiss roll where a guava paste is used as a filling. You will need a thinner consistency, such as a spread, for the filling. You can use it in place of the strawberry jam in our Classic Swiss Roll Recipe. You can add a little square of the paste in muffin batter before putting it in the oven for muffins with a guava surprise. You can also roll the dough out onto a floured surface and cut the circles out with a cookie cutter.

Move the flattened disc aside, and repeat the process until all of the dough has been made into circles. This isn’t a post on how to make guava jelly, but you can find it at almost any supermarket. There is also a guava paste from Goya you can find at almost any Hispanic grocer, and that works really well in this recipe. It’s called pasta de guayaba. If you find the premade empanada disc you can also make these, but the flavor will be pretty different than that found in Costa Rica as those tend to be much thinner than the dough in Costa Rica.

Do you love combinations of sweet and spicy as much as I do? I think pairing a spicy pepper with a sweet one makes for a good combination, and a spicy meat with some sweet sauce is excellent. One meat I love to pair with the sweetness of guava paste is spicy salami. Guavas naturally contain quite a bit of pectin, which is what makes jellies, jams, and goiabada gel together. A strainer or powerful cheesecloth to strain out the hard seeds (optional – I scooped out the seeds with a spoon like you would do with a pumpkin, but that method is more time intensive) Sugar and Lemon Juice: Add sugar and a splash of fresh lemon juice to the guava puree. The amount of sugar depends on your desired level of sweetness, but a general guideline is to add 1 cup of sugar for every 4 cups of guava puree. Stir well to ensure the sugar is fully dissolved. To get the best guava paste, it is important to select ripe guavas. Ripe guavas have a yellow-greenish color, are slightly soft to the touch, and emit a sweet and fragrant aroma. Avoid guavas that are very hard or have dark spots, as they will not have the right flavor for the recipe. What type of sugar can I use? Saucepan and Water: Place the prepared guavas in a saucepan and add enough water to cover them. Bring the water to a gentle boil over medium heat, allowing the guavas to simmer until they become soft and pulpy. This process typically takes around 20-30 minutes. I used a combination of both red and yellow guava which during the puree stage resulted in a delightful pink mix!
